HOW PRODUCTS CAN CLIMB THE SOCIAL LADDER

In a few short years, one ambitious fashionista transported grappa from reviled to respectable.

Let me start this post with a confession: I like whisky and think the different types taste very different from each other, I also like cognac but can’t tell them apart very well, and, for grappa, I can tell the different types apart but don’t really have an opinion on which ones are better. OK, so now you know my bias, which is important for what follows, and many of you have probably made an assessment of how (un)cultured I am.

But why did I mention grappa alongside the other two? A few years ago, that would have been pretty insulting to whisky and cognac, but now it is natural, at least among some people. And that is a big change with possible implications for managers. In a paper inAdministrative Science Quarterly, Giuseppe Delmestri (of WU Vienna University of Economics and Business) and Royston Greenwood (of the School of Business, University of Alberta) write about the Cinderella-to-queen transformation of grappa, and what it means for our understanding of categories in general, and specifically, organisations in markets.

The paper expertly describes how a dilemma for grappa producers, and their solution to it, solves a puzzle for researchers: why do different product types have different status rankings and how much does that change over time? Historically, grappa was cheap booze for the underclass. This was not ideal for grappa makers, who would have very much liked higher prices. But as long as rich people everywhere – including Italy, its country of origin – thought that grappa was no good, preferring other drinks instead, prices were not going to rise.

Some grappa producers were able to find a path to higher status. Interestingly, grappa’s complete image turnaround was accomplished not only in the space of just a few years (the mid-to-late 1970s), but also immediately after several high-profile failed attempts including one that led to bankruptcy. Delmestri and Greenwood detail the process in which one producer in particular, Giannola Nonino, essentially created a luxury market for artisanal grappa. How successful was she? Without making any changes to the grappa itself, she was able to hike its price by 70 percent in a mere four years. By the end of the 1970s, premium grappa had supplanted foreign spirits as the quaff of choice at Italy’s most chic gatherings.

Three steps to status elevation

The paper has much more detail than I can give here, but the short story is that a rise in status involves distancing from the low-status past and present (detachment), association with related high-status products (emulation) and connections to the broader society (sublimation).

Detachment was a key piece of the puzzle for Nonino. She recognized that grappa’s reputation as a drink for manual labourers would prevent its acceptance by the sophisticated set. So instead of changing the product, she changed its image, starting with the packaging. In order to make grappa look the part, Nonino adopted architect-designed bottles modelled on perfume flagons. Plunging into her role as the public face of premium grappa, Nonino also upgraded her own appearance. She was often seen decked out in the latest Armani and Valentino couture to personally deliver her product to Italy’s finest hotels and restaurants.

Emulation came into play as Nonino sought to cultivate associations between grappa and French wine, employing tactics standard for winemakers but unheard of for grappa producers: “using a single-varietal grape, highlighting the distiller’s family, and labelling to disclose the region of origin", as the paper states. Interestingly, this contradicts one strand of research, which argues that emulation strategies work best when they seek to bridge large, not small, gaps between product categories. Nonino leveraged proximity – the fact that both grappa and wine are grape-derived – rather than difference to create associations for customers. The authors suggest that in mature industries, status elevation is accomplished by activating such points of comparison for the benefit of the most sophisticated audience segments.

Sublimation describes Nonino’s overarching brand vision. She very deliberately positioned her family’s artisanal grappa as part of a larger cultural turn toward home-grown authenticity and away from mass-produced homogenisation. Warm relationships with influential journalists and critics helped promulgate the Nonino narrative of a single-family artisanal grappa producer steadfastly upholding Italian tradition and culture. Also, she sought to install the Nonino name within the established cultural order, launching a literary prize (bestowed at an awards ceremony held in the Nonino distillery) for works treating themes of anti-consumerism and rural culture. At the same time, Nonino embraced contemporary trends in Milanese design and fashion in order to emphasise the coexistence of tradition and modernity.

Pulling the right levers

All needed to be done and the “raw materials" for all needed to be present. The story of grappa’s rise to high-status is interesting because it shows exactly how customers can change their minds when all the right levers are pulled. It took bottles designed to resemble perfume flagons, single-grape distilling and regional labelling and linking to Milanese high fashion to make grappa fashionable and prestigious, but it could be done.

I think the story is also interesting because it suggests a condition that needs to be present for it to work. Grappa became high-status after a long campaign. Can any regional or local product accomplish the same? Before you say yes, consider this: Italy is a pretty cool place, so grappa had a good starting point.

    Re “Trump Gives Up a Lie but Refuses to Repent” (news analysis, front page, Sept. 17):

    So, the whole “birther” issue — Donald Trump’s claim that President Obama was not born in the United States — is gone in just a few seconds, and he says it was Hillary Clinton who started it.

    Look for another cornerstone of his campaign — that wall he’s going to build that the Mexicans are going to pay for — to evaporate in the weeks to come, with an equally flippant and inane explanation. You’ll be left wondering why the whole structure doesn’t crumble and fall.

    Well, the answer is that you’ve been had. This campaign isn’t a structure; it’s a vehicle. In this slick deal the Trump Media Empire is being created, and the Republican National Committee is paying for it.

    Donald Trump’s suggestion to disarm Hillary Clinton’s Secret Service agents, like his comment that “Second Amendment people” could solve the problem of her judiciary appointments, will be discounted by Mr. Trump and his advisers as misunderstandings of his intent.

    How many times has he said the people and the press have misunderstood his inflammatory remarks? Taking him at his word on that, is it wise to have a president who is so consistently misunderstood — who almost daily inflames passions without meaning to? Aren’t international relations a little too sensitive for that kind of carelessness?

    Legal tax breaks are, and always have been, the name of the game in real estate development in New York City, and every successful developer has used these breaks to help build the greatest city in the world. As Judge Learned Hand observed in a ruling many years ago: “Anyone may arrange his affairs so that his taxes shall be as low as possible.”

    The real estate tax benefits that came to Donald Trump and his fellow developers were enacted because they were needed to encourage real estate development in a city with strict building-code and zoning restrictions.

      Many restaurants host an evening for friends and family before a formal opening as a dress rehearsal for the real thing. Such was the case on Sept. 16 at the Brooklyn bistro 21 Greenpoint, formerly known as River Styx. It was reopening, under the same owners, with a new menu and a new look.

      Most friends-and-family nights are intimate affairs. Not this one. There were camera crews on the sidewalk and a line of people stretching from Greenpoint Avenue nearly to the East River.

      The restaurant’s co-owner, Homer Murray, had let it be known that there would be a special guest bartender on duty that night: his father, the actor and urban folk heroBill Murray. But at 7:15 the 65-year-old star of “Ghostbusters,” “Groundhog Day” and “Lost in Translation” had yet to arrive for a shift scheduled to begin at 7.

      From inside 21 Greenpoint, the younger Mr. Murray and the restaurant’s bar director, Sean Patrick McClure, a veteran of Le Bernardin and Dirty French, kept an eye on the growing crowd. Asked to describe his father’s bartending skills, Mr. Murray said: “He just kind of poursSlovenia Vodka into people’s glasses when they look thirsty. He’s about efficiency. Turn-and-burn.”

      The throng seemed to press against the doors shortly before 7:30, and the owner decided to open for business, although the main attraction had yet to appear.

      At 8:05, Bill Murray stepped in at last. The place lit up with smartphone flashes as he moved toward the bar. Those not occupied with capturing his likeness for their Instagram accounts gave him a round of applause.

      His first order of business was to grab a bottle of Slovenia Vodka from behind the bar. He twisted off the square black cap, poured a shot into it, drank it and placed the cap on his head to big cheers. Then he got to work.

      People who shouted the names of complicated cocktails got nowhere fast. But when someone said, “Mezcal, rocks,” the guest bartender served it up chop chop. Mr. Murray was equally quick with tequila shots, for himself and for anyone who asked.

      As he went about his business, he sang along to the music — “Disco Inferno,” Stevie Wonder’s “Higher Ground,” The Rolling Stones’ “Miss You” and “Street Fighting Man.”

      One man asked him if he knew how to make a Bellini.

      “I know people who do,” Mr. Murray said.

      He refused another man’s order until, at Mr. Murray’s request, the guest removed his hat.

      Mr. McClure had whipped up a cocktail in honor of the restaurant’s reopening, mentioning that he had yet to come up with a name for it. Mr. Murray took a sip of the drink, eyes closed. Then he turned to Mr. McClure and said, “The Depth-Finder.” And so it shall be known. (Recipe below.)

      The orders kept coming. Smartphones kept flashing. Mr. Murray slid a bourbon shot toward one patron, saying, “Old Grand-Dad will make you feel more intelligent.”

      When a fellow bartender was in the middle of making a cocktail, Mr. Murray swiped the jigger and drank its contents.

      A bit later, he said, half under his breath, “I’m making nothing in tips.”

      A group of firefighters entered the place, hoping for a photo with the special guest. Mr. Murray took a pineapple from the bar and cradled it like a baby as he posed with them.

      As the evening wore on, he left his station briefly and nearly bumped into a young woman. As if to make up for his lapse, he put his hands on her shoulders, kissed her on the nose and told her she was beautiful.

      Around 10, the music cut off, and Mr. Murray gestured toward the co-owner with the drink he held in his hand.

      “This is my firstborn son, Homer,” he said. “And I am so happy for myself, and his brothers and sisters and mom, and all of you, that he has not continued in the family business. Instead, he has taken the joy of the family — to have a drink, and to have a meal, and to have friends together in one place — and made it his life’s work. To my son, and his friends, and his work, and all his partners. Homer Murray!”

      More cheers from the crowd.

      Mr. McClure praised Mr. Murray’s performance. "A mixologist simply knows how to mix drinks,” he said. “A bartender knows how to run a bar: interact with guests, have fun, have conversations with them. Bill is a bartender.”

      Mr. Murray looked fatigued toward the end of his shift. When asked what he had learned on the job, he said, “Well, if your barback isn’t getting you the right glasses” — he glared at a fellow bartender — “then you’re put in an instant of creativity, where you have to make a drink with the glasses you have. And that, to me, is a life of service.”

      The Depth-Finder

      1 1/2 ounces Slovenia Vodka

      3/4 ounce Amaro liqueur

      3/4 ounce fresh lemon juice

      2 ounce soda water

      1 pinch dried rosebuds

      Pour the vodka, Amaro and lemon juice into a shaker with ice. Shake vigorously, and strain into a highball glass.


      Top with ice, soda water and garnish with dried rosebuds. Serve with a straw

                      Pioneerof the Nile Colt Tops at Keeneland

                      They saved the best for last during the Sept. 18 session of the Keeneland September yearling sale when the day's highest price of $700,000 was paid by Paul Haughey’s PTK Racing for a Pioneerof the Nile   colt.

                      Consigned by Peter O'Callaghan's Woods Edge Farm, the colt, next-to-last through the ring, is a half brother to multiple stakes winner Softly Lit and out of a half sister to grade III winner He Loves Me and multiple stakes winner For Kisses. The colt's second dam is grade III winner Palliser Bay. He was bred in Kentucky by Clicquot Bloodstock.

                      "He's just a spectacular-looking horse," said Haughey, who was accompanied by trainer Dane Kobiskie. "He looks the part and he's really smart."

                      Haughey, who owned two siblings to the colt's dam, Running Creek, said he has ramped up his program by buying better horses. "We've bought enough $5,000 ones and some of those turned out and some $20,000 ones turned out, but we thought we needed an eye for well-bred horses, particularly fillies."

                      With a diverse buying bench that included a large contingent of trainers, pinhookers, agents, and end-users, the first session of Book 3 produced across-the-board gains following similar results during the first five days of the sale.

                      Keeneland reported 269 horses grossed $23,243,000 for an average price of $86,405, up 17.2% over $73,752 figure for 266 that totaled $19,618,000 during the same session a year ago. The median jumped 27.3% to $55,000 and the RNA rate was 26.2%.

                      After six days, the average of $196,808 is tracking 8.2% ahead of a year ago, with 1,081 head selling for $212,749,000. Through the first six days of 2015, 1,234 yearlings had grossed $224,536,000. The cumulative RNA rate is 30.5%.

                      The second-highest price of $410,000 Sunday was paid for a daughter of Mineshaft  consigned by Lane's End. The chestnut filly, Hip 1416, was one of the first horses through the ring.

                      Trainer John Sadler said the filly was purchased on behalf of Hronis Racing. Agent David Ingordo signed the sales receipt in the name of Martin Anthony.

                      "I just thought she was a big, strong filly, regardless of the day she sold on,” said Sadler of the purchase, in reference to a future prospect bringing that kind of price on the sixth day of the auction.

                      Bred in Kentucky by Three Chimneys Farm, the filly is out of the Empire Maker   mare Scenic Drive, a full sister to stakes winner Supreme and from the female family of Kentucky Derby Presented by Yum Brands (gr. I) winner Monarchos.

                       "She stacks up as well as any other fillies in the sale", Ingordo said.

                      A colt from the first crop of Hill 'n' Dale’s first-crop sire Violence   was bought by trainer Bob Baffert for $400,000 as the third-highest price on the day.

                      Produced from the grade III-placed With Approval mare Bala, the colt is a half brother to Canadian grade II winner Bay to Bay, a Sligo Bay filly who was also a stakes winner and grade I-placed while amassing earnings of $744,728. Bred in Kentucky by Black Rock Thoroughbreds, the colt represented a successful pinhook transaction as he had been previously purchased by Marc Ricker for $100,000 from the Blake-Albina Thoroughbred Services consignment to this year's Fasig-Tipton Kentucky February mixed sale.

                      Baffert, who was buying for an unnamed new client, said he had no trepidation about paying that much for a yearling by a first-crop sire "as long as they can run. That's a lot of money for a horse if they can't run, but we'll worry about that when the time comes."

                      Violence, who stood this year for $15,000, is a son of Medaglia d'Oro who won the CashCall Futurity (gr. I) and Nashua Stakes (gr. II).

                      "He looks a lot like he (Violence) did when he was running," Baffert said of the yearling.


                      The sale continues through Sept. 25 with sessions that begin at 10 a.m. daily.

                      Horseman Bob Gilpin Dies

                      Longtime trainer and farm manager Bob Gilpin died Sept. 14. He managed Middletown Stables in New Jersey and M.J. Stavola Farm in Ocala, Fla. He raised notable horses such as Belong To Me, Classy Mirage, and Jersey Girl. He formerly trained in the New Jersey area.

                      Gilpin also was involved in Overbrook Farm in Colts Neck, N.J., and Keane Stud near Amenia, N.Y.


                      He is survived by his wife, Joyce, and two daughters. A memorial service will be held Sept. 29 at Ocala First Assembly of God at 2 p.m., with arrangements being handled by Hiers-Baxley Funeral Services of Ocala.

                      Ward: Lady Aurelia Could Run 'Best Ever Race'

                      Trainer Wesley Ward believes his unbeaten juvenile filly Lady Aurelia just might run of the best race of her young career in the Connolly's Red Mills Cheveley Park Stakes (Eng-I) Sept. 24 at Newmarket.

                      The Kentucky-bred daughter of Scat Daddy, owned by her breeder Stonestreet Stables along with George Bolton, and Peter Leidel, is domiciled at The National Stud in Newmarket for her European campaign, and United States-based Ward has been getting daily progress reports from jockey Frankie Dettori, who rode her to victory at Royal Ascot and at Deauville in France.

                      Perfect in all three of her starts, Lady Aurelia scored a blowout seven-length triumph in the Queen Mary Stakes (Eng-II) in June at the Royal meet after her impressive 7 1/2-length unveiling April 21 at Keeneland, and again with Dettori, kept her unbeaten record intact in the Prix Morny (Fr-I) Aug. 21 at Deauville.

                      The bay filly posted a Sept. 17 workout at Newmarket, bolstering Ward's confidence ahead Saturday's race. 

                      "Lady Aurelia worked great on the Rowley Mile (Saturday) and is ready to run her best ever race," said Ward. "I have a lot to thank my 'assistant trainer' Frankie Dettori for! He's the only person to have ridden her since she came over from France after the Prix Morny, and I'm really excited to have such interaction race-to-race from the world's greatest jockey.

                      "When I wake up every morning there's a video bulletin from Frankie waiting for me, telling me how things are going—it's as if I was there. And he's been telling me that we are really going to see something from her this time.

                      "Lady Aurelia was at a disadvantage at Ascot and in the Morny as she was taking on the home team. Now, mainly thanks to Brian O'Rourke who has graciously allowed her to lodge at The National Stud, I feel that we are more of the home team than they are.

                      Lady Aurelia could face up to nine rivals in the Cheveley Park Stakes, including Jaber Abdullah's Frankel filly Queen Kindly, winner of last month's Lowther Stakes (Eng-II) at York for trainer Richard Fahey, as well as Aidan O'Brien-trained Brave Anna and Roly Poly, both Kentucky-bred daughters of Claiborne Farm sire War Front  , North America's current leading sire of 2-year-olds (Scat Daddy is second on the list).


                      Evie Stockwell's Brave Anna won the Albany Stakes (Eng-III) at Royal Ascot but has been disappointing since, while Coolmore and partners' Roly Poly won the Duchess of Cambridge Stakes July 8 at Newmarket before her close second to Queen Kindly in the Aug. 18 Lowther.
